WHAT ARE REASONABLE GOALS FOR “KITCHEN AND FOOD SAFETY GOALS AT GREAT OAK?”

Areas of concern that we probably want to address first at GO:

(1 )
Regarding Personal hygiene: virus, bacteria.
How and when to wash hands:
Problem that we don’t have a dedicated handwashing sink and we wash veggies
the small sink.
Can we divide the sink use--make one side the handwashing station, with a
sign
Protocol of washing hands every time we change tasks
Supplies needed: gloves, finger cots
Keeping paper towels stocked

Regarding Contaminants: biological, chemical and physical
Is the Hobart working? Seems to not being hot enough. It needs to be
checked.
Storage--stop storing oils and other things on the floor, any other
reorganization as needed
Suggestion to sanitize kitchen surfaces before we cook, and we need the
correct supplies and procedure
Handles up for silverware, for example
Protocol for labeling prepared food--day of the week stickers/or labels
with dates

Time-Temperature abuse (ex: condiments and salad dressings) labeling when
they are opened

Other things to consider going forward: Allergens, Cross contamination

HOW DO WE SHARE KNOWLEDGE AND PRACTICE?
Make signs
Share at an alternative meeting
Once we have a training for everyone, we can require a training at the
beginning of the work season for new cooks
Write up these things with “why” and “how”
Put up a checklist for people to go through during cook shifts

Next steps for Tammy, Patti and Gayle
Get together, do a “deep dive” of what needs to happen in the kitchen.
Develop Standards of Practice-- easily sharable
Plan an alternative meeting for the fall

BBQ GRILLS
Veggie grill is unsafe and meat grill is not working well (heats very
unevenly). We decided to repace them both. Elph will purchase new grills.

Also, safety question has come up regarding metal bristles on grill
cleaning brushes. Elph will get rid of the brushes. Catherine will send out
an email with new grill cleaning protocol. Tammy will show Mary what dinner
cleaners should do regarding grill cleaning and Mary will add this info to
the kitchen training.

PAYPAL PAYMENT OPTION
Catherine emailed the community to find out the level of interest in using
Paypal, (assuming that there will be a 3% surcharge.) We agreed that if
there are 5 or 6 people interested, we might pursue using Paypal again. We
only heard from a few people, but also learned that the eat at gocoho.org
account is already setup with PayPal and it might not be extra work for the
billers. Next steps?

Catherine will explore further to find out exactly what is involved and
bring back more information.

DONATED KIDS GLASSES
Kelly is offering some dishwasher proof glasses to the common house. Mary
will email Kelly to accept the donation and pick them up from Kelly.

DINNER CLEANING
We sent a reminder of tasks to complete to some people who missed some
particular tasks on during their dinner clean shifts.

SERVING SPOONS Elph is looking for new serving spoons identical to the
ones we had before (only one is left).

Special formats for popular meals: as-needed third assistant cook, popular
menu that can be managed without head cook, dinner clubs for those who like
to eat out of the box, etc.

2022 Vision and May 3 community input - Which areas are we on track? What
needs more attention? (upcoming: August reporting to community)

TIMELY MENU POSTINGS
Timely menus are posted 10 days prior to the meal.
Mary--will remind Sunday head cooks
Yi-miau--will remind Monday head cooks
Catherine--will remind Tuesday head cooks
Elph--will remind Wednesday head cooks


NEXT MEETINGS: 8/14; 9/10


MONKEYS -- NEW
Elph will purchase new grills.

Tammy, Patti and Gayle will get together, do a “deep dive” of what needs to
happen in the kitchen, then develop Standards of Practice-- easily sharable
and plan an alternative meeting for the fall

Catherine will explore further to find out exactly what is involved to
re-open the PayPal option for meals bills and bring back more information.

Mary will email Kelly to accept the donation of children’s glasses

Mary will pick the children’s glasses up from Kelly.







MONKEYS FROM PREVIOUS MEETINGS -- embrace things as DONE
DONE Catherine will email the community to find out the level of interest
in using Paypal, (assuming that there will be a 3% surcharge.)

Gail will check to make sure Meals biller job description is up to date.

Yi-Miau will send an email to Talk with the link to the job description,
asking for people to let the committee know if they are interested in
training for the job of Meals biller.

Gail will look into the data on meals costs and we will revisit.

Mary will email the community with an update about community expectations
and agreements about special diet requests.

DONE Yi-Miau will convene a separate meeting for us to hear how our newly
certified SafeServe managers would like to share into with the community.

July 16th; August 14th, September 10, 7pm at GO sitting room.

meals biller, possibly new job for ServeSave coordinator
