KITCHEN SANITIZING IMPLEMENTATION PLAN
The people who took the ServSafe training have recommended a sanitizing
protocol.
Patti currently has the job of ServSafe Implementation Coordinator. Tasks
for this job may include: written steps for cooks and cleaners, distributed
to workers and posted in the kitchen, communication with the shopper about
necessary supplies, being available to answer questions from people.
Patti and Yi-Miau will meet on Friday to talk about it--the timing, what
support she needs from Meals committee.
PAYPAL FOR MEALS BILLS
There is increasing interest from diners in having a PayPal option for
paying Great Oak meals bills. Kathy and Becky H, meals billers, have said
that they’d be willing to learn how to do this.
We think that using the Friends and Family option is reasonable. Yi-Miau
will email Finance and Legal with our recommendation to use the Friends and
Family option, and ask if there are any concerns. Catherine will ask Kathy
and Becky to go ahead and start setting up the system.
We want to think about how this might change the workload for the meals
billers, but we won’t know for sure before it’s time to set the jobs for
the next “mega-season.” We think we could add .5 hours to the meals billers
for the next work season. This would cover the time it takes for the meals
billers to learn and implement the new system. Yi-Miau will set up a
one-time additional work credit for the Meals billers in the next work
season for setting up the PayPal option.
COLOR CODE CHART FOR CUTTING BOARDS: Our handy chart is gone from the
kitchen. Gail will work on a new chart once she has a list of the what each
color of cutting board is used for. Gail will check with Patti and Tammy to
ask about ServSafe recommendations for cutting boards and determine whether
we need more cutting boards.
DISHES BUILDING UP OVER THE WEEKEND
Sometimes Sunday head cooks are frustrated by coming in to cook and finding
many dirty dishes to wash. We would like to change the culture somewhat by
asking people to handwash dishes in between meals and load them into a
rack. The idea is that we can all do a little bit to help keep things ready
for cleaning. So if we see a few dishes that haven’t been washed, we can do
those as well as our own mug, bowl, etc.
Gail will make and post signs to this effect. Catherine will give Gail some
plastic sleeves to put the signs in.
Catherine will send an announcement out to Talk. Also asking meal cleaners
to set up a rack at the end of a cleaning shift instead of the tub of soapy
water.
Catherine will update the meals job email lists and then send an email to
cleaners about the change.
MEALS JOB SCHEDULING ISSUES
We are working to resolve some communication issues regarding meals job
scheduling.
REFRESHING MEAL TYPES: WEEKDAY NIGHT, MEETING NIGHT, SUNDAY NIGHT
We discussed how to make sure all of the various details are entered
correctly when we create meals. Yi-Miau will create checklist for Meals
Schedule Entry Person to use to double check their work. Yi-Miau will also
create the job description.
INNOVATIONS WE’VE NOTICED AND THOSE WE ARE LOOKING FORWARD TO…
Nice to see more teens signing up for meals work. How can we support them
to have a positive experience? Teens can request to work with people they
are comfortable with. Head cooks, if they so desire, can indicate their
interest in relationship or skill building with teens on meals shifts to
help provide them with a positive experience.
We’ll share this info with the Youth Engagement Committee, and email meals
workers about selecting to work with teens if they would like. Catherine
will send these emails.
NEW MONKEYS
RE- MONKEY re-survey the community about what allergens and food
limitations people have. Tammy will create the survey and work with
Yi-Miau to get it out. The question was also raised about including Sunward
and Touchstone in the survey.
Yi-Miau will email Finance and Legal with our recommendation to use the
Friends and Family option for PayPal meals payments, and ask if there are
any concerns.
DONE Catherine will ask Kathy and Becky to go ahead and start setting up
the system.
Yi-Miau will set up a one-time additional work credit for the Meals billers
in the next work season for setting up the PayPal option.
Gail will check with Patti and Tammy to ask about ServSafe recommendations
for cutting boards and determine whether we need more cutting boards.
Gail will work on a new chart once she has a list of the what each color of
cutting board is used for.

meals and load them into a rack.
